Monday, November 16, 2009 Many years ago, just before I met my husband, I had a roommate, Geri. She was without a doubt the best roomie anyone could ever ask for. I met her at the Las Vegas Hilton, a hotel that I worked at for 10 years. Geri was a sales manager in the catering department. I was a tour and travel sales manager. Geri would bring home the best groceries ever! And at Christmas time her mom would make us home made tamales.
Geri and I cooked and cleaned and did what ever roommates are supposed to do. We only hung out with each other now and then and would have dinner together with friends or family from time to time. She was just awesome!
One time I got really, really sick, with the worst kind of creeping crud you could ever imagine. Aches, pains, fever, chills, stuffy head and chest, you name it I had it. So Geri said she was going put on a pot of “Magic Soup” and it would make me all better! And it did! It was so, so good! She used Angel Hair Pasta and added tomatoes and zucchini and the basic recipe below. Over the years I have made various versions of this soup, using different types of pasta or vegetables. My husband and anyone else I have made it for loves it. It has truly become a family staple.
Last week Caiden’s mom got really sick, my husbands project coordinator got really sick, then the kids were sick (surprisingly they didn’t get as sick as the adults). It was pretty much a given that my husband and I would get sick, and we did. Anyway it’s pretty much what’s been going around with everybody in all parts of the country.
So I whipped up a big pot (8 quarts) of “Magic Soup”. I always like to make a big batch of just about everything I cook, why, because as I have mentioned before, I am a lazy cook. I like a lot for left overs or to freeze for future use. So I thought you all would like to have the recipe for “Magic Soup”. So here yah go, I hope you enjoy, it has brought many years of goodness to my family and friends.

Magic Soup
Hearty and Heart Warming! Good For What Ails You!
Ingredients
2.5 lbs Ground Turkey
196 oz Chicken Broth (I used 2-48 oz & 1-32 oz box of Swanson’s low sodium broth)
1 Onion chopped
6 Stalks celery chopped
6 Carrots sliced into rounds
3 Cloves garlic, chopped
1/2 tsp Garlic salt
2 tsp Pepper
1/2 lb Pasta
2 tbsp olive oil
Procedure
1. Pour olive oil in bottom of pan
2. Add ground turkey, cook until it is a coarse crumble
3. Add, garlic salt, salt & pepper (red pepper flakes if desired)
4. Add chicken broth
5. Add vegetables
6. Simmer until vegetables are cooked
7. Bring to boil and add pasta of your choice, cook until pasta is done
Preparation Time: 30 minutes
Cooking Time: 2 hours
Yield: 8 Quarts
Tips
You can add 1 tbsp of Red Pepper Flakes if you like spicy or are feeling stuffy. This is a base recipe, add any vegetables you like, zucchini, tomatoes, etc.

I have used angel hair pasta, egg noodles, spiral noodles, but this time I found these FANTASTIC NOODLES at guess where, Wal-Mart! They are so awesome, like home made, they didn’t take long to cook and didn’t get mushy like some others would on day 2!
