Lobster Rolls

Ingredients
1 pound Lobster steamed & chilled
3 stalks Celery diced
3/4 cup Mayonnaise
1/4 cup Fresh lemon juice
Salt to taste
Pepper to taste
6 small *Rolls uncut
1/4 cup Butter melted
Instructions
Steam Lobster and Chill
Unshell Lobster and cut into chunks
Dice Celery
Mix Mayonnaise, the juice of 1/2 Fresh Lemon (about 1/4 cup), celery, salt & pepper to taste
Fold in Lobster chunks
Slice Rolls from the top to the middle but not all the way through * These are very small dinner type rolls*
Brush on melted butter, toast on grill or in broiler until golden brown
Spoon Lobster in the toasted rolls and serve 3 per person
